Ingredients
250 g fresh ginger
2 litres water
150 g white sugar
15 whole cloves
1 tablespoon citric acid
1 tablespoon almond essence
Ice cubes, for serving
Instructions
Step 1
Bring the water and sugar to a gentle boil in a large saucepan.
Step 2
Peel and finely grate the fresh ginger. Add it to the boiling water and let it simmer for 10 to 15 minutes.
Step 3
Remove the pan from the heat and stir in the cloves, citric acid, and almond essence.
Step 4
Allow the mixture to cool completely. Strain it through a fine sieve or a clean cheesecloth to remove the ginger and cloves.
Step 5
Refrigerate for at least five hours, or overnight for the best flavour.
Serve cold over plenty of ice cubes and enjoy.
